Sauteed Peas with Lemon and Mint

 

Market Fresh Cooking: Sauteed Peas with Lemon and Mint                                                                                    

 

Ingredients

  • 2 lbs sugar snap or snow peas
  • Olive oil
  • Salt
  • 1-2 lemons
  • 1 bunch mint (chopped)

Method

  1. Wash peas and remove ends
  2. Heat olive oil in a skillet and add peas in a single layer. Sprinkle with salt.
  3. Sautee peas until soft and just starting to brown.
  4. Add a squeeze of lemon to the pan.
  5. Remove peas from heat and toss with chopped mint.
  6. Enjoy!
