Kale and Hearts of Artichoke Salad

This is a quick and easy way to enjoy kale.

Cut whatever amount of kale you want to serve into ribbons and add whatever amount of whole artichoke hearts from a jar that you like. Then toss the mix with olive oil, lemon juice, minced garlic, and salt and pepper to taste, and finish by dusting it with freshly grated Parmesan.
