Evil Stepmonster Sweet Potatoes

Ingredients:

• 2 ¾ lb. Sweet Potatoes
• ¾ cup Honey
• ½ cup Milk
• 1 tsp Vanilla
• 1/3 cup Butter
• 2 Eggs
• 1 cup Shredded Coconut
• 1/3 cup Flour
• 1/3 cup Butter, melted
• 1 cup Chopped Pecans
• ½ cup Brown Sugar

 

Preparation:

1. Cut sweet potatoes into 1 inch cubes and steam until tender. Mix with honey, milk, vanilla, butter, and eggs and place in a 10’ x 14’ baking dish.
2. Combine the coconut, flour, pecans, and brown sugar. Add the 1/3 cup melted butter.
3. Sprinkle on top of the sweet potatoes.
4. Bake at 375 degrees F for 20 minutes, until brown.
