With high rates of poverty and poor nutrition in New Mexico, it can be difficult to know how to prepare a nutritious meal on a budget. Many people would like to include more organic and local foods in their meals, but feel it’s not within their budget or that they lack the skills to make a tasty meal.
The Institute has provided our community with several cooking classes, including Local Organic Meals on a Budget (done in partnership with Kitchen Angels in 2014), a program with Cooking with Kids, and Market Fresh Cooking.
During the warmest months we offer Market Fresh Cooking demos. These informal food demos feature simple recipes with minimal seasonal ingredients. Recipes are made available at the demo table as well as at the Information Booth so customers can shop for the ingredients and make the recipes at home.
