Cucumber & Tomato Salad

Market Fresh Cooking: Cucumber & Tomato Salad

Ingredients

  • 1 small onion (thinly sliced)
  • 1 cucumber (diced)
  • 1 pound of tomatoes (diced)
  • 2 tbsp. lemon juice
  • 1/4 cup olive oil
  • 1/8 tsp salt
  • 1/4 tsp oregano or basil (fresh or dried)

 

Method

  1. Combine onion, cucumbers, and tomatoes in a large bowl.
  2. Whisk lemon juice, olive oil, salt, and pepper in a small bowl.
  3. Pour olive oil and herb mixture over the salad and serve. Enjoy!

 

Add chickpeas, quinoa, beans, feta/goat cheese, corn, mint, or other vegetables for a more delicious simple salad!
