Market Fresh Cooking: Cucumber & Tomato Salad
Ingredients
- 1 small onion (thinly sliced)
- 1 cucumber (diced)
- 1 pound of tomatoes (diced)
- 2 tbsp. lemon juice
- 1/4 cup olive oil
- 1/8 tsp salt
- 1/4 tsp oregano or basil (fresh or dried)
Method
- Combine onion, cucumbers, and tomatoes in a large bowl.
- Whisk lemon juice, olive oil, salt, and pepper in a small bowl.
- Pour olive oil and herb mixture over the salad and serve. Enjoy!
Add chickpeas, quinoa, beans, feta/goat cheese, corn, mint, or other vegetables for a more delicious simple salad!
